The BEST Tahini Fudge Recipe

OMG stop everything you’re doing to go and make these RIGHT now!! 😂

For real though, this fudge has changed my life! It’s so quick, simple, and since the ingredients are panty staples, it’s easy to whip up whenever I’m craving a little somethin’ somethin’ sweet.

….And since I created this recipe I’ve been making it pretty much weekly!

The reason I make this so often and why its become a go-to recommendation to my clients is because the ingredients are simple and clean whole foods, its anti-inflammatory, sugar and dairy free, and contains tons of anti-oxidants, minerals, and healthy fats.

The super star ingredient here is the tahini which if you’re not sure what it is, it’s just sesame seeds whipped into a sesame paste/butter. It’s AMAZING and I use it on pretty much everything from salad dressings, to roasted veggies, on top of any protein dish, and even in desserts like this fudge!

Sesame seeds are super high in selenium which is a nutrient that is necessary to help our body’s make glutathione - our master anti-oxidant. Loading up on selenium is a great way to help support our body’s detoxification pathways.

Selenium is also a key nutrient in thyroid health, and oftentimes after breast cancer, I see a lot of women exhibit symptoms of low thyroid function (myself included). This is often due to the stress that the diagnosis and treatment brought on. So loading up on tahini is a great way to provide support to your thyroid and help balance out the rest of your hormones.

The last thing I’ll say about sesame seeds - I feel like I could go on forever lol - is that they are super high in absorbable calcium. Calcium is a mineral that is abundant in veggies and fruits and its needed for a lot of functions in the body, but especially in the maintenance of bone health.

After breast cancer treatment, many of us experience temporary or permanent menopause and we don’t give too much thought to how this impacts our bones. In women, estrogen is a primary factor that helps bones grow. Basically, our bone cells break down and then estrogen helps them regenerate and this process happens simultaneously.

But during menopause when estrogen is super limited, the bone cells are still breaking down, but there is no estrogen there to stimulate the bone regeneration process. This is why in all the osteoporosis commercials you see, it’s older women.

Unfortunately, young women like you and myself also need to worry about our bones because well, we only get one set! So support your bones with the nutrients you need to build more and get them from whole, nutrient dense foods - like sesame seeds and also broccoli, bok choy, and almonds. Or this fudge!

Ok so here’s the recipe!

Prep time: 5 mins.

Freeze time: 30 mins minimum (ideally 45)

Ingredients:

1 cup tahini

1/4 cup coconut oil, melted and cooled

1 1/2 tsp vanilla extract

2 tbsp monk fruit sweetener (or can use maple syrup)

1/4 cup plus 2tbsp dairy free chocolate chips (I use stevia sweetened ones to make them sugar free, the brand is called Lily)

1/4 tsp sea salt (for sprinkling on top)

*optional: can add in 2 tbsp raw cacao powder to make chocolate tahini fudge

Directions:

  1. Line 8x4” loaf pan with parchment paper

  2. mix tahini, coconut oil, vanilla, mink fruit sweetener, and cacao powder if using until combined. Can add a splash of almond milk if needed to thin it out, but it should mix throughly without it unless its the really thick bottom of the jar tahini 😂

  3. Fold in 1/4 cup chocolate chips (or can use chopped nuts).

  4. Sprinkle additional 2tbsp chocolate chips on top or extra nuts. sprinkle with sea salt.

  5. Freeze for minimum of 30 minutes

  6. Cut into squares and enjoy!
